Beetroot, hummus & crispy chickpea sub sandwich
Load up a sub with homemade hummus, beetroot, chickpeas and salad to make this filling vegan sandwich. An ideal lunch for when hunger strikes
Spread the slices of bread with butter, then the mayonnaise over one slice and the mustard over the other. Pile the pastrami over the mustard side, then add the cheese and sauerkraut. Pile over the lettuce, then sandwich with the mayonnaise-covered side. Skewer everything in place with a cocktail stick, and a few cornichons if you fancy.
